Cream together the following:

  • 2 cups white sugar
  • 1 ½ cups cooking oil

Add

  • 4 eggs and cream well.

Put in a flour sifter the following:

  • 3 cups flour flour [packed]
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon (Your Mum adds some nutmeg and bit of cloves)

Add, a third at a time, the dry ingredients to the creamed mixture. The mixture will end up being very heavy until you add 2 cups carrots [grated and packed]. Now, the mixture should be moist. You can add 1cup of walnuts, if desired.

Bake in tube pan or 2 low pans [greased and floured] at 350 degrees for 1 to 1 1/4 hours; making sure toothpick  comes out clean. Put wax paper or brown paper [waxed] on bottom of tube pan. If you use 2 pans, they will not take as long to cook.

Cool and ice with following mixture, all creamed together:

  • 4 ounce cream cheese
  • 1 heaping tablespoon of creamed butter
  • 1 ½ cups icing sugar

This makes a large cake, which keeps moist for a long time, refrigerates or freezes well.
